Sanmaioroshi preparatory test and cutting :
10 minutes
A bar in Sanmai Oroshi:
(Present the fish as a saku (fillet) on a plate and keep the bones in a separate tray. The two fillets should have the central bones removed and the white part of the belly removed. And the skin removed from one of the two fillets).
A mackerel in Sanmai Oroshi:
(Remove the white part of the belly and keep the bones).
EDOMAE Test - Sashimi:
60 minutes
20 pieces of nigiri
12 pieces of maki
6 kazari maki
Sasagiri (Bonus)
+ A plate of Sashimi with between 12 and 16 pieces
