Sanmaioroshi preparatory test and cutting :
10 minutes
Sea bass in Sanmai Oroshi :
(Present the fish as a “saku” (fillet) on a plate and keep the bones in a separate tray. The two fillets should have the central bones removed and the white part of the belly removed. And the skin removed from one of the two fillets).
A Sanmai Oroshi mackerel:
(Remove the white part of the belly and keep the bones).
EDOMAE test - Sashimi :
60 minutes
